Chocolate Banana Steel Cut Oats

Steel Cut oats are a trendy "superfood" right now. I did a little tiny amount of research and apparently they have slightly lower calories and a lower glycemic index then regular rolled oats...but in our family we tend to eat them because of their delicious chewy texture. I'm a texture girl, and rolled oats can sometimes make me gag a little. They're so mushy! We love them, but they can be hard to cook properly.

This recipe is super easy, and only a little time consuming. Steele cut oats are more difficult to make then your traditional oatmeal. It takes longer and the consistency has to be just right in order to be tasty, the the time spend cooking them tends to be actual in-the-kitchen time as opposed to putting it in a pot and walking away. But this is a foolproof way to get delicious, perfect steel cut oats.

Ingredients:
1 c steel cut oats
3 c water
2 pinches of kosher salt (table salt can work as well)

Toppings:
2 mashed/chopped/sliced bananas--we did a mix of mashed and sliced for peak banana flavor
chocolate chips
brown sugar
cream/milk

1. On the stove top, in a large-ish pot bring the 3 cups of water and 1 cup of oats to a boil, then reduce heat to medium low. Let simmer for 20 minutes, stirring every 2-5 minutes. If you're adding mashed bananas do it now, and stir it in.

2. Top with bananas, brown sugar, and sprinkle with chocolate chips! YUM! Now I will warn you not to go too heavy on the chocolate chips if you're also using brown sugar. I just sprinkled a tiny amount on and it was perfect!

Obviously you could add any toppings you want to this. I really wanted toasted walnuts yesterday with my bananas, but alas my husband used up the last of our walnuts making banana bread. But when my four year old daughter suggested chocolate chips I jumped on board! I love love love chocolate and banana together, and this was delish. We have also made pumpkin steel cut oats with some pumpkin puree, pumpkin pie spice and brown sugar. Or a tropical version with some pineapple, bananas and shredded coconut (my husband uses coconut milk for that version as well).
