grilled sausage and pepper sandwiches with sweet hot mustard

It's almost grilling season! This is one of our favorite summer dishes for the grill, we just love eating these on the back patio on a warm summer night. It doesn't hurt that it's one of the easiest meals ever. Throw a salad or grilled corn on the cob on the side and you've got a full (and delicious) meal.

Ingredients:



3 peppers
1 onion (I use a red onion because it has a little more flavor)
a package of chicken or turkey sausages, we like al fresco sausages
stadium hoagie rolls
sweet hot mustard
Salt
pepper
some oil for sauteing the veggies

Chop up the peppers and onions finely and mix together. Salt and pepper to taste, like this:

Add about 2 tsp of oil to a pan and saute the peppers and onions until they're a little bit softened. Just a little! You want them to still have some crunch. Then pour some sweet hot mustard over it all and saute for another few minutes, mixing in the mustard.

Grill the sausages, put them in the hoagies then top with the pepper mixture. If you want you can add more sweet hot mustard.

Eat them! Eat them like your life depends on it!

  2. Oh LORD does this make me hungry. Now, if I could just eat two of those and not gain any weight. HA! Oh wait, that's in my dreams. :)

    1. Lol! Actually if you use turkey/chicken sausage it's not that bad for you! Mustard has almost no calories, there's tons of veggies, and we use canola oil to lightly saute them. And, as Hilary pointed out, if you want them to be gluten free you skip the bun and *poof!* there goes 200 calories!
