1 onion (I use a red onion because it has a little more flavor)
a package of chicken or turkey sausages, we like al fresco sausages
stadium hoagie rolls
sweet hot mustard
some oil for sauteing the veggies
Chop up the peppers and onions finely and mix together. Salt and pepper to taste, like this:
Add about 2 tsp of oil to a pan and saute the peppers and onions until they're a little bit softened. Just a little! You want them to still have some crunch. Then pour some sweet hot mustard over it all and saute for another few minutes, mixing in the mustard.
Grill the sausages, put them in the hoagies then top with the pepper mixture. If you want you can add more sweet hot mustard.
Eat them! Eat them like your life depends on it!
