This was supposed to be the easiest dinner ever. I jokingly told Hilary that this was the longest salad I've ever prepared! Not because it's a difficult salad, but because my little Dude decided that right before dinner would be a good time to do things like escape out the front door and dump chow mein noodles all over my floor. He doesn't like to have me focused on anything other then his highness, that Dude.
So anyhow. It really is super simple! Barring any emergencies like toddlers escaping out of front doors, the prep and and cook time on the meal is under 30 minutes! And the outcome is a delicious, healthy dinner that even my four year old loved.
Feeds 4-6 people, too!
3 chicken breasts
2 cans of mandarin oranges
1/2 of a red onion
1 bag of snow peas
1 package of spinach salad mix (I'm classy like that, I use bagged salad.)
1 cup chow mein noodles
1/2 cup sliced almonds
A sesame dressing--I used Annie's toasted shiitake sesame dressing
1. Cook your chicken. I lightly pan-fried mine with a fat free cooking spray, then slice it up. Slice some thin slices of red onion, about half of it.
2. Put your salad mix, snow peas, onions, and mandarin oranges in a large bowl. Place the sliced chicken on top, then sprinkle with the almonds, chow mein noodles, and sesame seeds.
3. Lightly drizzle everything with the sesame dressing, and serve! That's it!
See what I meant when I said this should have been the easiest dinner ever? Well, one cannot control for the whims of Gods and toddlers. Maybe next time!
