pumpkin oatmeal muffins (gluten free!)

It's no secret that we looooove pumpkin in our house, so today I'm sharing my recipe for gluten free pumpkin muffins. I've several pumpkin recipes before, like my quick'n'dirty pumpkin butter, and cake mix pumpkin muffins. The pumpkin muffins have been such a hit that we make them regularly, but I wanted to try something a little healthier then cake mix to feed my kids!

This recipe was super quick and also had the benefit of being gluten free, which means I could make a huge batch and freeze them for my niece and nephew to eat for snacks as well.



I've been seeing a lot of gluten free recipes lately that call for ground down oatmeal as a base, so I decided to try it out myself!

Ingredients:
2 cups oats, (I used instant, it's what I had. But regular rolled would work too)
1 cup vanilla greek yogurt
2 eggs
2 tsp baking powder
2 tsp baking soda
2 tsp vanilla
1 1/2  cup pumpkin puree
2 tsp pumpkin pie spice
1 tsp cinnamon
1 cup sugar

1. Preheat the oven to 400 degrees.

2. Grease a muffin pan, or put in the muffin liners.

3. Mix the eggs, greek yogurt and pumpkin in a food processor until they're good and blended.

4. Add the sugar, oats, cinnamon, pumpkin pie spice, baking powder and baking soda and continue blending until everything is smooth and mixed together.

5. Scoop the oats mixture into the muffin pan. At this point you can top them with some nuts or chocolate chips.

6. Bake for 18 minutes, and you get a luscious, soft muffins, that are also gluten free!

Now I would not skip the sugar, some recipes you can and the muffins still taste great, but this recipe really needs it. My first batch of muffins was not nearly sweet enough. The kids still like them, but as Hilary said "I like my muffins to taste like cake." And she's right! I do too! You could use honey or agave if you want to be "healthier" but I just used plain old sugar, and it was delicious!
