As I mentioned in this post about what I'm loving right now, I have been obsessively eating cucumber sandwiches and I thought I would share my own cucumber sandwich recipe with you! I don't know what it is about this sandwich, the creamy cream cheese, the crispy cucumbers...I am just in love! So today I'm going to show you how to make your own ultimate cucumber sandwich.
Now, I've been experimenting with all kinds of other add ons and veggies and I hit on the perfect mix! It bares little resemblance to the traditional British tea snack, but man is it delicious! It's food like this that makes me think I could be a vegetarian.
Then I remember steaks.
Yeah...so not giving up steaks.
But I digress! Here is the recipe I came up with for my own personal version of a cucumber sandwich. It's a little bit crazier then the British version, a little extreme, but it's the perfect light, delicious and healthy summer lunch! It's like the British tea sandwich's crass, loud and clueless but somehow still sexy American cousin.
1 Tbsp cream cheese (I used green onion flavor, but plain is fine too!)
4 green onion stalks, chopped
1/4 of a red pepper, chopped finely
1/8 cucumber, sliced fairly thin
1/4 container of alfalfa or onion sprouts
1 slice of swiss or muenster cheese (or crumbled goat cheese, that's amazing too)
On one piece of bread spread the cream cheese on your bread, then sprinkle on your green onions and red peppers. Set the sprouts on the other piece of bread, they'll stick better if you put them directly onto the cream cheese! On top of the sprouts put down your cheese, then cucumbers. And you're done!
