Date Night Beer-Caramel Corn



My (Jessica's) husband's birthday is in a few weeks, and in honor of His Awesome Manliness, I thought I would come up with a fun recipe for a movie night treat he would enjoy for our at home date night. We both love popcorn and of course who doesn't love a good beer? I thought...why not combine the two? And so the recipe for this man-pleasing beer-caramel corn was born!



Beer-Caramel Corn

3/4 cup brown sugar
2 tsp vanilla
2 tsp cinnamon
1/2 cup beer (we used my husband's homemade brew, but any will work!)
3 Tbsp butter
2 Tbsp corn syrup

6 cups of popped popcorn

Optional: walnuts for topping

1. Pop your popcorn, and set aside in a big bowl.

2. In a pot over medium heat, melt the butter then combine all the other ingredients. Boil until the gooey mess is bubbling slightly and the sugar is totally dissolved. Simmer for a few more minutes until the beer is dissolved as well, stirring constantly. This might be about 2-5 minutes.

3. Once your topping is fully melted and dissolved, pour it straight from your pot onto your bowl of popcorn. Toss it quickly so that every piece of popcorn is coated. Move quick before the caramel gets solid!

4. If you want, top with some walnuts, and serve!


If you want to be a super awesome spouse you could serve it with the rest of the beer in a frosty mug and their favorite movie on the side. Boom! Instant happy husband (or wife)!
