Homemade gluten-free chicken nuggets (and bonus DIY honey mustard dip)

Does anyone else have kids who love chicken nuggets? Yes? What a shock. Anyone else secretly love their kid's nuggets? Me too! Especially when they look as yummy as these do:

I used rice Chex! That's right, these crispy, golden, luscious nuggets are 100% gluten-free and easy to make at home yourself. They're also completely husband and kid approved!

Homemade Gluten-free Chicken Nuggets

Here's what you'll need:
1 1/2 cups of rice or corn Chex
2-3 chicken breasts
3 eggs
extra virgin olive oil

Preheat your oven to 375 degrees, and grease a cookie sheet fairly liberally with your extra virgin olive oil.

Pour about 1 1/2 cups of rice Chex into a gallon ziploc bag. I crushed it by hitting it a lot with my fists, lol. The kids loved this! The toddlers especially loved pounding away until everything was crushed.

Cut up your chicken breasts into flatish 2 inch chunks:

Take your eggs and whisk them, then put your chicken pieces four or five at a time into the eggs mix. Let them soak a few minutes to get covered, then toss them in your crushed Chex:

At this point, you'll have some "breaded" chicken. You should let them sit for a while, until the Chex breading is kind of soggy and saturated with egg. It will help the breading stick to the chicken instead of to the pan.

Bake at 375 degrees for ten minutes, then use a fork to gently flip them so that both sides get golden and crispy:

Serve them just like you would any chicken nuggets, with ketchup or honey mustard for dipping!

Bonus! Here is how my family makes our own super yummy honey mustard dipping sauce. My kids love this sauce and they love to help make it too.

Honey Mustard Dip:

Step 1: Combine equal parts honey and mustard. We used a slightly spicy mustard for more kick.

Step 2: Mix, and you're done!

If you have leftover chicken nuggets, you can freeze them for up to a month, and just thaw and bake for a bit to crisp them up again. This is great for future lunches and quick dinners in a gluten-free house.   2. Rice Chex are definitely a staple in our house. Thanks for the great idea. We can't eat eggs either so I'll have to experiment a bit with getting them to stick. Sometimes just soaking in olive oil works.

  8. Hi, I made these tonight and did exactly as the recipes said to. The first batch was not good at all, barely breaded and tasted very bland. The second batch I added garlic salt pepper and Italian seasoning to the bag of chex mix first and let it cook about 16 minutes- it was much better.

  9. Thank you thank you thank you I needed a fast chicken nugget recipe for my son !!!!! THIS IS EASY enough and I have all the ingredients
    I just need to fry them because my son is under weight and the doctor everything FAT friendly for him !!! but he has so many allergies that this recipe fits the bill hopefully the chex survives in the oil. I am going to add garlic etc to the chex cereral that is so smart lavi. Im Cuban American and my mom makes bistec empanizado and its the same process but with bread crumbs we add all those spices in the mix
