After some hemming and hawing on the part of my husband, we went paleo (mostly) a week and a half ago and have been gnoshing on amazing meals like this:
In the past week and a half, I've lost almost 4 pounds and my husband's lost five. We've been without caffeine (eek!) for that long and I feel so. much. better. It is difficult to describe how much peppier and healthier I feel.
I can't give away any of the book's awesome recipes, but I am sharing one of my own. I was inspired by the use of coconut milk in smoothies (way more filling long-term than normal yogurt and milk smoothies), and since I'm not drinking pumpkin spice lattes right now (too much sugar, dairy and caffeine), I decided to try a pumpkin smoothie instead!
Here's the amazing recipe (approved by my husband and daughter):
Paleo Pumpkin-Banana Smoothie
1 can pumpkin
1 can full-fat coconut milk
1/2 cup Coconut Dream coconut drink
1 Tbsp. honey
1 tsp. cinnamon
1/4 tsp. nutmeg
Puree all of the ingredients together and serve it with a little sprinkle of cinnamon on top!
I love it, no chopping, no prep, super easy and quick. Pumpkin is amazingly healthy for you, the Coconut Dream coconut milk has a bunch of added nutrients, while the banana and coconut milk add creaminess and keep you full! And its dairy-free!
