You know who loves ice cream? This girl! And who doesn't love that most glorious of ice cream toppings: toasted coconut? It's crunchy, it's sweet, it's even (kind of) good for you! And something you may not know is that it's super easy and quick to make yourself at home. I (Jessica) tried this for the first time a bit ago and now I'm addicted! I'm eating it on everything. Oatmeal is especially good, but so ice ice cream. Mostly ice cream, if I'm being honest.
What? I really love ice cream!
Anyways, today I'm going to show you how you can make a pile of golden toasted coconut of your own:
Take about two cups of coconut, sweetened or unsweetened:
Choose the largest pan you can and heat it to medium heat, without greasing it! You want a big pan so that you can lay them out in a single layer. They cook much more evenly that way:
Cook over medium heat, stirring every few minutes to get each piece cooked. Coconut burns really easily, so make sure you stir pretty often:
When each piece is pretty evenly golden brown, take them out!
My favorite way to use toasted coconut (other then ice cream!) is on top of some sliced ripe bananas with some Greek yogurt. Yum! A healthy breakfast or dessert. Or both.
