So summer is almost here (at least in southern Idaho...it's hot already! This northern Washington girl isn't used to that!). Well summer always means that we start wanting salads instead of big heavy meals. Since my (Jessica's) family loves tacos, it's a no brainier to switch out shells and tortillas for a lighter and healthier version.
Heathy Taco Salad
1 head (non-iceberg) lettuce. We use chopped Romain leaves. This is a super simple way to get more nutrients out of your salad, iceberg lettuce is basically just chlorophyll and water held together with some basic cells. Pretty much any other kind of lettuce will have more nutritional value!
low-fat sour cream
1 can chopped olives
1 large tomato, diced
2 avocados, diced (we go heavy on the avocados because they are so nutritionally dense)
1 red onion, sliced
1 can of corn, rinsed and drained
2 chicken breasts, cooked and chopped, and lightly fried with taco seasoning. You can use a single packet, or we make our own. It's super easy!
Cheese (I use queso fresco, we're addicted!)
A few crumbled tortilla chips
This really isn't a recipe per se, as you really just throw everything in a bowl and then eat it. We like to do it while the chicken is still warm so that the cheese melts a bit and the sour cream makes a nice cool contrast. But it's good cold too, if you want to prep it several hours before!
